When you want to eat fried noodles but don't have fresh noodles on hand, you can use ready-made dried noodles instead. The taste will be a bit different from the usual fried noodles you normally eat. Let me show you how to fry this ready-made dried noodles into a tasty and appetizing fried noodle dish.
Into a large bowl, add fish sauce – one small bowl's worth. Add finely chopped ginger – 1 tablespoon, finely chopped garlic – 1 tablespoon, oyster sauce – 1 tablespoon, sesame oil – 1 tablespoon, sugar – 1 tablespoon, chili powder – a little, and paprika powder – a little, then mix well.
Cut 20 or 30 pieces of boneless chicken breast into cube-sized pieces and put them into a bowl. Don't add all of the sauce mixture you made earlier — add only half of it. Then mix evenly and let it marinate for about 1 hour so the flavor soaks into the meat.
Once the time is up, put the marinated chicken into a wok and fry it. There's no need to add oil. Once fried, scoop it out into a bowl.
Add a little sesame oil into the wok. Slice 3 shallots and add them in. Cut 3 sprigs of Chinese coriander (cilantro) into small pieces and add them. Also slice 1 large carrot into thin strips and add it. Add a portion of cabbage, sliced, and fry everything together.
While it's not yet fully softened, add the dried noodles – 2 pieces if they are large, or 3 pieces if small. Add 1 and a half small bowls of chicken stock, then cover and let it sit for about 5 minutes. After a while, stir it. Once well mixed, add the fried chicken and stir again. Since the sauce mixture you made at first was only used half for marinating the chicken, pour in the remaining half now.
