Hello everyone! This time, the dish I'd like to share is a spicy pumpkin and prawn curry.
Ingredients
- Cooking oil - 3 tablespoons
- Coconut milk - 360 milliliters (24 tablespoons)
- Pumpkin - 2.5 viss (peeled and cut into small cubes)
- Prawns - 8 ounces (shelled and cleaned thoroughly)
- A little salt and lime juice - 3 tablespoons
- Red chili - 5 pods (thinly sliced)
- Onion - 1 bulb (thinly sliced)
- Lemongrass - 1 stalk (thinly sliced into rings)
- Garlic - 3 cloves (thinly sliced) and ginger - 1 small piece
- Turmeric powder - 3/4 teaspoon
Step-by-step method
1. In a food processor (or blender), add the chili, onion, lemongrass, onion, ginger, and turmeric powder, and blend until finely ground.
2. Heat a pot and add the cooking oil. Once the oil is hot, add the chili paste made earlier and stir for about 5 minutes.
3. Add the coconut milk and bring it to a boil. Then add salt, lower the heat, and continue cooking for another 10 minutes.
4. Add the pumpkin cubes and continue cooking for another 5 minutes.
5. Once the pumpkin has softened, add the prawns and stir for another 3 minutes.
6. Then add the lime juice, give it a final stir, and turn off the heat. However, leave it on the stove for about 15 minutes so it can finish cooking with the residual heat, which makes it taste even better. (If you don't want to use lime juice here, you can substitute it with tamarind leaves.)
