Ingredients

Half an onion
One stalk of spring onion
One small carrot
About 4 ounces of beef (or pork, or chicken, or shrimp)
1 tablespoon fish sauce

Half to 1 tablespoon tomato sauce (ketchup)
A little salt and pepper
A little oil
Rice for two people
4 eggs

Step-by-step instructions

Finely chop the onion, spring onion, carrot, and meat.

Heat a pan and add 2 tablespoons of oil. Add the onion, spring onion, carrot, and meat into the pan and stir-fry. Once the meat is cooked, add 1 tablespoon of fish sauce and stir well. Add salt and pepper, then taste and adjust the seasoning.

Next, add the rice and fry it thoroughly until well mixed. Just before it's done, around the 1-minute mark, add the tomato sauce, salt, and pepper, and continue frying. Then transfer the fried rice onto a plate.

Now it's time to fry the eggs.

Beat 2 eggs well and pour them into the pan to fry (if you want to make another serving, you'll need another 2 eggs).

Spread the egg into a round shape, and while it's still slightly undercooked, place the fried rice lengthwise right in the middle of the egg.

Using a flat spatula, fold the sides of the egg over the rice.

Then, carefully slide the egg-wrapped rice onto a plate, making sure the rice doesn't spill out.

Finally, drizzle some tomato sauce over the top of the egg.
