Ingredients
- 1 red radish
- 1 white radish
- about 4 sprigs of cilantro
- 4 chili peppers
- 1 tablespoon salt
- 1 tablespoon fish sauce
- 1½ tablespoons sugar
- 2 tablespoons vinegar
- 450 milliliters water (30 tablespoons)
- a 1-liter capacity glass bottle
Step-by-step instructions
1. Peel the red radish and white radish, then wash them. After that, cut them into thin strips. (You may also cut them into small cube shapes if you prefer.)
Slice the chili peppers thinly as well. Also slice the cilantro thinly.
2. Put the red radish and white radish into a large bowl and knead them evenly with half a tablespoon of salt. After that, let them sit for about 20 minutes.
Once 20 minutes have passed, rinse them thoroughly with water until clean. Letting them sit like this will help remove the raw smell from the white radish.
3. Once they have been thoroughly rinsed clean with water, put the radishes into an airtight glass bottle. Add the chili peppers and cilantro. Pour in the fish sauce, salt, sugar, and vinegar into the bottle as well. Then add water until it covers the radishes.
4. After that, close the bottle tightly and put it in the refrigerator for at least 2 hours up to overnight.
5. When you're ready to eat it as pickled radish, put the amount you want to eat into a small bowl. Then drizzle a little sesame oil over it.
This way, you can enjoy it as a salted pickle side dish when eating noodles or drinking soup.
