Hello everyone! For those who love pork and potato curry, this time I want to share a recipe for mixed vegetable potato pork curry made with a variety of vegetables such as tomatoes, cabbage, long beans, and watercress.
Ingredients
- Pork belly 2 pounds (cut into medium-sized pieces)
- Potato 1 piece (peeled and cut into cubes)
- Pork sausage 2 pieces (cut into medium-sized pieces)
- 1/4 of a cabbage (thinly sliced)
- Long beans 18 pieces
- Tomato 1 piece (cut into cubes)
- Watercress 1 bunch
- Shallot 1 bulb (thinly sliced)
- Garlic 4 cloves (thinly sliced)
- Water 3 cups (48 tablespoons)
- Ground pepper and salt, a little
- Cooking oil 3 tablespoons
Step by step instructions
1. Heat the pot and add oil. When the oil is hot, add the garlic and shallots and sauté until fragrant.
2. Add the tomatoes. Once the tomatoes have softened, add the pork pieces and stir until they change to a brown color.
Then add the pork sausage pieces and stir for about one minute.
3. Then add the water. Cover the pot with a lid and simmer for about 45 minutes to an hour, until the pork becomes tender. (You can add more water if needed.)
4. Once the pork pieces have become tender, add the potatoes and simmer for about 5 minutes.
5. Then add the long beans, cabbage, and watercress, and stir for about 3 minutes.
6. Add salt and ground pepper, and taste to check the seasoning for saltiness.
Once everything is done, you can take it off the stove. Now you have a delicious bowl of potato and pork curry ready to serve.
