Ingredients needed

  • Pork 200 grams (thinly sliced)
  • Salt 1/4 teaspoon
  • Cooking wine half a tablespoon
  • Oyster sauce one tablespoon and light soy sauce half a tablespoon
  • One piece of ginger about an inch in diameter (peeled and thinly sliced)

  • Scallions 4 stalks (thinly sliced) and garlic 1 clove (thinly sliced)
  • Pork stock (or water) 4 tablespoons
  • White pepper powder 1/4 teaspoon and cornstarch 3 teaspoons
  • Sesame oil 2 teaspoons and a little cooking oil
  • 10 pieces of mushrooms (thinly sliced)

Step-by-step instructions

1. After slicing the pork thinly, mix it thoroughly with salt, cooking wine, oyster sauce, water (or pork stock), and white pepper powder. After marinating for about 3 minutes, add the cornstarch, knead it well, and let it rest for about 10 minutes. Just before frying, add 1 teaspoon of sesame oil and mix thoroughly once more.

2. Heat the wok. Add a little cooking oil, and once the oil is hot, add the pork and fry for about 5 to 8 seconds. Then immediately scoop it out into a bowl.

3. If a lot of oil remains in the wok, pour off the excess oil. It's fine to leave about 1 tablespoon of oil for sautéing the garlic. Then add the garlic, ginger, and scallions, and sauté until fragrant. Next, add the mushrooms, oyster sauce, and light soy sauce, and fry for about 30 seconds.

4. Then add the scallions and pork, and stir-fry together with the mushrooms. Now you'll have a delicious mushroom and pork stir-fry dish ready.
