Step-by-step instructions
1. Put the thinly sliced pork into a bowl and mix well with sugar, salt, ground pepper, clear fish sauce, cooking wine, and water until evenly combined. Let it sit for about 15 minutes so the seasonings can soak into the meat.
When the 15 minutes are up, mix in the corn starch again. Then, right before frying, mix in 2 teaspoons of vegetable oil.
2. Heat up a pan/pot and add the oil. Once the oil is hot, you can add the pork and fry it. When the meat is almost cooked, transfer it to a plate. Remove the excess oil in the pot, leaving about 1 tablespoon of oil, which should be enough.
3. Next, add the garlic to the pot and sauté it in the oil. Add the green chili peppers and stir-fry for about 20 seconds. Add a little salt and stir-fry again.
