Hello everyone. This time, I'd like to share the recipe for a bamboo shoot and pork belly curry, cooked with pork and bamboo shoots mixed together.
Ingredients
- Bamboo shoots 150 grams
- Sugar 35 grams
- Vegetable oil, a small amount
- Ginger 15 grams and shallots 30 grams
- Cooking wine, 1 table spoon
- Pork belly 800 grams
- Star anise 2 pieces and 1 cinnamon stick
- 1 dried chili
- Light soy sauce 20 milliliters and dark soy sauce 35 milliliters
Step-by-step instructions
1. Before even starting to prepare the dish, soak the bamboo shoots in advance for about 3 hours. (You'll need to change the water at least 2 times)
2. Cut the pork into medium-sized pieces. Heat a pot, add a little oil, and fry the pork pieces until they turn golden brown.
3. Heat another pot and add about 15 milliliters of vegetable oil. Once the oil is hot, add 35 grams of sugar and cook it until the sugar melts from solid into liquid form.
4. Once the sugar has melted into liquid, pour in the pork pieces that were fried earlier and stir evenly. Once the caramel color has spread evenly over the pork pieces, add the thinly sliced ginger, shallots, star anise, cinnamon stick, and dried chili into the pot and stir.
5. Next, add just enough hot water to barely cover the meat. (Since this isn't a soup dish, you don't need to add a lot of water. Also, avoid pouring the hot water directly onto the meat, as this could change the color of the pork.)
6. Cover the pot with a lid and wait until it comes to a boil. During this time, cut the bamboo shoots into medium-sized pieces. Once the pork pot comes to a boil, add the bamboo shoots, then add 1 teaspoon of salt, and let it simmer for about 30 minutes.
Once all these steps are complete, you'll have a delicious bamboo shoot and pork dish ready.
