Here's a pork rib and mustard green soup broth for you. Besides mustard greens, it's cooked with other vegetables too, giving it a uniquely delicious flavor that's great to drink. The pork ribs will also be tender with a lovely sweet and sour taste. Let's cook it together…
Ingredients
Pork ribs – 30 viss (cut into 1-inch pieces)
Mustard greens – 1 bunch (washed thoroughly and cut into 2-inch pieces)
Tomatoes – 2 (seeds removed, cut into 8 wedges)
Cauliflower – a portion (cut into small pieces)
Tofu – 1 block (cut into pieces)
Snow peas – 5 (sliced lengthwise diagonally)
Baby corn – 4 (sliced lengthwise diagonally)
Spring onion – half a bunch (sliced lengthwise diagonally)
Lime – 2 (for juicing)
Red chili – 2 (halved lengthwise)
Shallots – 2 (sliced thinly)
Garlic – 2 cloves (sliced thinly)
Ginger – 1/2 teaspoon
Salt, chicken powder
Method
1. First, mix the pork ribs evenly with salt (1/2 teaspoon) and chicken powder (1/2 teaspoon).
2. Next, pour water (6 cups) into a pot and bring it to a rolling boil.
3. Once boiling, add the pork ribs, cover, and cook over high heat for about 4 minutes until tender.
4. Then add the shallots, garlic, ginger, red chili, and vegetables (cauliflower, snow peas, baby corn) and stir to mix.
5. After that, add the mustard greens, tofu, and tomatoes.
6. For seasoning, add salt (2 teaspoons), chicken powder (1.5 teaspoons), sugar (1 teaspoon), and lime juice, then stir well to combine.
7. When the taste is just right, top with spring onions, and your pork rib and mustard green soup is ready to be served…
