For those wondering how to cook a delicious pork rib curry, I'd like to share this pork rib curry recipe made with Shaoxing wine.
Ingredients
- 5 cups water (1.5 liters)
- 1/4 teaspoon salt
- 800 grams pork ribs
- 1 tablespoon vegetable oil
- 1 piece ginger (smashed flat with the back of a knife and thinly sliced)
- 2 cloves garlic (thinly sliced)
- 3 tablespoons fermented soybean paste
- Half a bell pepper (cut into medium pieces)
- 1 onion (cut into 1-inch cubes)
- 1 tablespoon Shaoxing wine
- 1/2 teaspoon sugar and a pinch of white pepper powder
- 1/2 teaspoon sesame oil
- 2 1/2 teaspoons light soy sauce and 1/2 teaspoon dark soy sauce
- Cornstarch slurry (1 tablespoon cornstarch mixed evenly with 2 tablespoons water)
- 1 stalk spring onion (thinly sliced)
Step-by-step instructions
1. Pour 1.5 liters of water into a large pot. Add 1/4 teaspoon of salt. Add the pork ribs and let them soak for about 40 minutes.
When the 40 minutes are up, remove the pork ribs. Strain the pork rib liquid through a sieve to get a clear, clean liquid.
2. Return the pot to medium heat. Add the ginger and sauté in oil for about 15 to 30 seconds.
3. Add the garlic, fermented soybean paste, garlic, and white pepper powder, and stir-fry for about a minute. Then add the pork ribs.
4. Add the Shaoxing wine. Then add the pork rib broth and bring it to a boil.
5. Add the sugar, white pepper powder, sesame oil, light soy sauce, and dark soy sauce, and stir-fry for about 2 minutes.
6. Then pour in the cornstarch slurry. Stir until the sauce thickens slightly, and just before removing the pot from the heat, add the spring onion.
Now you have a delicious bowl of pork rib curry ready to enjoy.
