For those who love noodle soup, this time I'd like to share the recipe for a spicy kimchi noodle soup.
Ingredients
- 1 tablespoon vegetable oil
- 5 mushrooms (thinly sliced)
- Half a bowl of kimchi (thinly sliced)
- 4 tablespoons kimchi juice
- 625 ml chicken stock (or vegetable stock, or water)
- 2 teaspoons chili powder
- 1/4 teaspoon sugar
- 1 tablespoon sesame oil
- 1 pack of instant noodles
- 1 stalk spring onion (thinly sliced)
Step-by-step instructions
1. Heat a pot and add the vegetable oil. Once the oil is hot, add the mushrooms and stir-fry for about 3 minutes.
2. Add the kimchi and stir-fry for another 2 minutes.
3. Then add the kimchi juice, chicken stock (or vegetable stock, or water), sugar, chili powder, and sesame oil, and let it simmer for about 5 minutes until it boils.
4. Meanwhile, cook your pack of noodles according to the instructions on the package. There's no need to add the seasoning packet and the oil packet that come with the noodles.
5. Place the cooked noodles into a bowl. Pour the soup you prepared earlier into the bowl over the noodles. And there you have it — a delicious spicy kimchi noodle soup ready to enjoy.
If you'd rather not put the noodles in the bowl first, you can also add them directly into the kimchi soup and then transfer everything straight into the bowl — that works too.
You can also add other toppings such as boiled egg or beef if you like.
