Hello everyone. This time, I'd like to share a delicious mixed vegetable pork stew recipe made with vegetables such as potatoes, carrots, and mushrooms.

Ingredients

  • 2.5 lb pork (cut into medium-sized pieces)
  • 4 tablespoons wheat flour, 1½ teaspoons salt, 1½ teaspoons black pepper, and 1 teaspoon chili powder
  • 3 tablespoons olive oil
  • 1 onion (thinly sliced)

  • 4 cloves garlic (finely chopped)
  • 16 tablespoons chicken broth
  • 2 stalks Chinese celery (cut into about half-inch lengths)
  • 5 carrots (peeled and cut into half-inch cubes)
  • 4 potatoes (cut into one-inch cubes)

  • 1 can crushed tomatoes
  • 1 teaspoon thyme
  • 8 oz mushrooms (sliced)
  • 1 bunch fresh green peas and coriander

Step-by-step instructions

1. In a large bowl, mix together the wheat flour, half a teaspoon of salt, half a teaspoon of black pepper, and the chili powder until well combined.

Then add the pork pieces and coat evenly.

2. Heat a pot and add the olive oil.

3. Once the oil is hot, add the pork pieces and stir for about 2 to 3 minutes. (Depending on the size of the pot and the amount of pork, you may need to fry the pork in batches.)

Once the pork turns brown, transfer it to a plate.

4. Next, add the sliced onion to the pot and sauté for about 1 minute. Then add the garlic and sauté for about 30 seconds.

5. Then add the chicken broth and stir well. Add the Chinese celery, carrots, potatoes, and crushed tomatoes, and stir until well combined.

6. Next, add the thyme and the remaining salt and black pepper, then let it simmer for about 45 minutes.

7. Once it starts boiling, add the pork and let it simmer for about 30 minutes, stirring occasionally.

8. Then add the mushrooms and green peas, and simmer for another 10 minutes.

After tasting and adjusting the seasoning to your liking, sprinkle in some chopped coriander.

And there you have it — a delicious mixed vegetable pork stew ready to serve!
