Ingredients
- 1 lb beef or pork (minced)
- 8 cups of water
- 2 potatoes (cut into small cubes)
- About 1/4 of a bowl of rice
- 1 carrot (sliced thinly lengthwise)
- Half an onion (sliced thinly)
- 1 clove of garlic (sliced thinly)
- Coriander leaves (sliced thinly)
- A little salt
- A little ground pepper
Step-by-step Instructions
Bring water to a boil in a pot. Add the rice, then reduce the heat slightly and let it simmer. Add the diced potatoes into the pot and let it cook.
Mix the minced beef or pork with garlic, coriander, salt, and ground pepper thoroughly. Then shape the mixture into meatballs. Heat a pan over medium heat, add a tablespoon of olive oil, and let it heat up. Then add the beef or pork meatballs and fry until golden brown.
Add the fried meatballs into the pot with the simmering potatoes.
In another pan, add a tablespoon of olive oil, then add the onion and carrot, and fry for about 5 minutes.
Add the fried carrots into the pot, then add salt and pepper, and taste. Let it continue to simmer for about 5 more minutes.
Once you turn off the heat, add some coriander leaves for fragrance.
Then transfer it into a bowl. Now you can enjoy this delicious beef or pork meatball and potato soup while it's warm.
