Hello everyone! This time, the dish I'd like to share is Dried Pork Leg Scrambled Eggs. If dried pork leg isn't available, dried salted pork can also be used. And if you just want to use plain pork, finely mincing the pork instead of frying it in chunks will give a tastier result.

Ingredients

  • Dried pork leg (bacon) - 8 slices
  • Eggs - 8
  • Light Cream - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper powder - 1/8 teaspoon

  • Butter - 2 tablespoons
  • Cheese - 5 tablespoons
  • Thinly sliced spring onion - 2 tablespoons

Step-by-step Instructions

1. Heat a pan and add 1 tablespoon of butter. Once the butter has melted, add the dried pork leg slices and fry until they turn golden brown.

2. Transfer the cooked dried pork leg slices onto a plate lined with paper towels to absorb the oil. Then, cut them into small pieces.

3. Crack the 8 eggs into a large bowl and beat until well mixed. Add the cream, salt, and black pepper powder, then whisk again until well combined.

4. Add the remaining butter into the pan and let it melt. Then pour in the egg mixture.

5. While the eggs are still slightly undercooked, gently stir with a spatula.

6. Add the cheese and fried dried pork leg pieces, then stir-fry until well combined.

After that, you can take it off the stove. Finally, sprinkle some spring onions on top and enjoy it deliciously with rice.

This scrambled egg dish can also be paired with toasted bread.
