Seasoning ingredients

  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 1 tablespoon soy sauce
  • 2 tablespoons sugar
  • 2 teaspoons thinly sliced garlic

Step-by-step instructions

1. Cut the tteokbokki rice cakes into moderate lengths and soak them in water for about 20 minutes.

2. Peel the shrimp. Cut the eel into small pieces. Cut the enoki mushrooms and green onion into 2-inch lengths.

3. Heat a pot and add the gochujang, gochugaru, soy sauce, sugar, and garlic, then bring to a boil over high heat. After that, add the tteokbokki rice cakes and cook for about 8 to 10 minutes. Stir frequently so the rice cakes don't stick to the pot.

4. Once the rice cakes have softened, add the enoki mushrooms and cook for another 2 to 4 minutes. Taste the sauce and add a bit more seasoning if needed.

5. Next, add the shrimp, eel, and green onion, and stir evenly. Cook until the seafood is fully done.

6. Sprinkle the Mozzarella cheese over the tteokbokki. Cover with a lid and cook until the cheese melts completely.
