Ingredients
- Soy sauce 5 tablespoons
- Sesame oil 4 teaspoons
- Honey 2 teaspoons
- Boneless chicken breast 1.5 lb (cut into small pieces)
- Olive oil 6 tablespoons
- Spring onions 2 stalks (thinly sliced)
- Ginger, thinly sliced, 1 tablespoon
- Garlic 3 cloves (thinly sliced)
- Chicken stock 20 tablespoons
- Sugar 3 tablespoons
- Cornstarch 4 teaspoons
- Rice vinegar 1 tablespoon
- Crushed chili pepper 1 teaspoon
- Snow peas, 4 small bowls' worth
- Sesame seeds 2 tablespoons
Step-by-step instructions
1. In a small bowl, mix soy sauce 3 tablespoons, sesame oil 2 teaspoons, and honey until well combined. Then pour over the chicken pieces and mix well. Marinate for about 20 minutes.
2. When the time is up, drain the liquid from the chicken pieces. Heat a wok and add 2 tablespoons of olive oil. Then add the chicken pieces and fry for about 3 to 5 minutes. Transfer the cooked chicken pieces to a bowl.
3. Add the remaining 2 tablespoons of olive oil into the wok. Add the spring onions, ginger, and garlic, and sauté for about 1 minute.
In a small bowl, mix together the chicken stock, cornstarch, rice vinegar, crushed chili pepper, and 2 tablespoons of soy sauce until well combined. Then pour into the wok and simmer for about 3 minutes until thickened. Then add the remaining 2 tablespoons of sesame oil.
4. Then add the fried chicken pieces and mix well. Once done, transfer to a serving plate.
5. In another pot, add water and bring to a boil. Once boiling, add the snow peas and boil for about 2 to 3 minutes.
Drain the cooked snow peas well, making sure no liquid remains, then add them to the plate of chicken. Then sprinkle a little sesame seeds and spring onions on top.
