Ingredients
- 2 red chili peppers
- 1 shallot
- 1 bundle of kale (ka-nyutt)
- 1 tablespoon oil for frying
- 1 pound chicken breast (cut into medium-sized pieces)
- 2 tablespoons corn starch
- 2 tablespoons fish sauce
- 1 tablespoon sesame oil
Ingredients needed to make the sauce
- 60 ml fish sauce
- 2 tablespoons honey
- 1 tablespoon ginger (thinly sliced)
- 2 cloves garlic (thinly sliced)
- 2 tablespoons rice vinegar
- 1 teaspoon chili flakes
- 250 ml chicken stock
- 1 tablespoon toasted sesame seeds
- 2 stalks spring onion (thinly sliced)
Step-by-step instructions
1. First, toast the sesame seeds. Thinly slice the spring onion and set it aside in a small bowl.
2. Thinly slice the chili peppers, shallot, and kale.
3. Massage the chicken with corn starch, fish sauce, and sesame oil until evenly mixed.
4. In a new bowl, mix together the fish sauce, honey, ginger, garlic, rice vinegar, and chicken stock until well combined.
5. Heat a pot and add the chicken to fry. Once the chicken has turned golden brown, transfer it to a plate.
6. Next, add 1 tablespoon of oil to the pot, then add the chili peppers, shallot, and kale, and stir-fry for about 3 minutes.
7. Once the vegetables have softened, add the mixed sauce and the chicken, and stir-fry for about one minute.
8. Add the sesame seeds and spring onion, then taste and adjust the seasoning as needed. Once all these steps are complete, you will have a delicious mixed vegetable chicken stir-fry.
