Hello everyone! For those who are tired of only ever stir-frying watercress, this time I'd like to share a different way to enjoy it — a vegetable salad recipe.

Ingredients

  • 1 bunch watercress (leaves picked)
  • 1 bunch needle mushrooms
  • 2 tablespoons toasted sesame seeds
  • 3 tablespoons ice water
  • 1 tablespoon pounded garlic
  • 1 tablespoon clear fish sauce
  • A pinch of salt
  • Half a tablespoon vinegar
  • Half a tablespoon sesame oil

Step-by-step instructions

1. Add a little salt to boiling hot water.

2. Add the mushrooms and watercress to the boiling water and let them boil for about 2 minutes. As soon as 2 minutes are up, immediately scoop them out into a large bowl.

3. In a small bowl, mix together 2 tablespoons toasted sesame seeds, 3 tablespoons ice water, the pounded garlic, half a tablespoon clear fish sauce, a pinch of salt, half a tablespoon vinegar, and half a tablespoon sesame oil until well combined.

4. Pour the prepared sauce over the watercress in the bowl. Then mix and toss thoroughly to combine. Taste for seasoning, and once it's just right, you'll have a delicious watercress and mushroom salad ready to enjoy.

It can be enjoyed deliciously together with rice.
