Step-by-Step Instructions
1. In a medium bowl, mix the chicken pieces thoroughly with 1 teaspoon fish sauce, 2 teaspoons rice flour, and 1 teaspoon vegetable oil. Heat a wok, add 2 tablespoons of vegetable oil, then add the chicken pieces and stir-fry. Once the pale white color of the chicken disappears, transfer it to a plate.
2. Lower the heat, add another 2 tablespoons of oil, then add the ginger and stir-fry for about 1 minute. Then add the garlic and sugar and stir-fry for another 2 minutes.
3. Right away, return the fried chicken to the wok, add the spring onions and 1 tablespoon of fish sauce, and stir-fry for about 1 minute.
