Hello everyone! I'd like to share how to cook a flavorful mixed vegetable pork rib soup that gets its lovely red color from tomatoes, without using any red chili powder at all.

Ingredients

  • Pork ribs - 2 viss
  • Cooking oil - 2 tablespoons
  • Shallots - 2 bulbs (thinly sliced)
  • Garlic - 6 cloves (crushed with the flat side of a knife)
  • Tomatoes - 3 (cut into medium-sized chunks) and tomato paste - 2 tablespoons

  • Potatoes - 1 viss (peeled and cut into fairly large chunks)
  • Water - 2.5 liters
  • Carrots - 2 (cut into fairly large chunks)
  • Cabbage - 1/4 head (cut into medium pieces)
  • Salt - 2 teaspoons and ground black pepper - 1 teaspoon

Step-by-step method

1. After washing the pork ribs, pat them dry with a cloth. Add 2 tablespoons of oil to a pot and heat it up.

2. Once the oil is hot, add the pork ribs and stir until they turn brown. Add the shallots and garlic, and stir until the shallots soften.

3. Once the shallots have softened, add the tomatoes and stir until they dissolve into the oil.

4. Once the oil has turned red from the tomatoes, add 2.5 liters of water. Add the carrots, cabbage, 2 teaspoons of salt, and 1 teaspoon of ground black pepper, cover with a lid, and let it simmer for about an hour.

5. After an hour, once it's boiling, add the potatoes. Then lower the heat and let it simmer for another 30 minutes or so.

6. Once the time is up and the potatoes have become soft, add salt and taste to check the seasoning lightly.

Once the taste is just right, your mixed vegetable pork rib soup is ready to enjoy.
