Ingredients

  • Shrimp 12 oz (340 grams)
  • Fresh broccoli 10 oz (285 grams)
  • Chicken stock 120 ml (warmed)
  • Sugar 1/4 teaspoon
  • Light soy sauce 1 1/2 tablespoons and dark soy sauce 1/2 teaspoon

  • Oyster sauce 1 tablespoon and sesame oil 1/2 teaspoon
  • White pepper powder 1/8 teaspoon
  • Garlic 2 cloves (thinly sliced)
  • Oil 2 tablespoons and Chinese cooking wine 1 tablespoon
  • Cornstarch 1 1/2 tablespoons (mixed with 2 tablespoons of water)

Step-by-step instructions

1. Wash and peel the shrimp. Cut the broccoli into bite-sized florets.

2. Put 1 liter of water in a pot and bring it to a boil. While waiting for it to boil, mix the chicken stock, sugar, light soy sauce and dark soy sauce, oyster sauce, sesame oil, and white pepper powder together thoroughly in a bowl.

3. Once the water is boiling, add the broccoli and blanch it for about 30 seconds. Then remove the florets and rinse them with water.

Add the shrimp into the same boiling water and blanch for about 15 seconds. At this point, the shrimp should be about 60-70% cooked.

4. Heat a wok over high heat and add 2 tablespoons of oil. Once the oil is hot, add the garlic and sauté until fragrant. After adding the Chinese cooking wine, pour in the previously mixed chicken stock sauce and bring it to a boil.

Once the sauce is boiling, add the shrimp and broccoli and stir-fry everything together thoroughly.

5. Then add the cornstarch slurry and stir well again. Once the sauce has thickened, you'll have delicious Stir-Fried Broccoli with Shrimp ready to serve.
