Hello everyone! For those who are bored of plain omelettes, this time I'd like to share a recipe for a Chinese-style omelette fried with a mix of shrimp, mushrooms, bean sprouts, and spring onions.
Ingredients
• 6 eggs
• 2 mushrooms
• 100 grams bean sprouts
• 2 stalks spring onion
• A little oil for frying the eggs
• 325 grams shrimp (peeled, washed, and marinated with salt and pepper)
• 125 ml chicken stock
• 2 teaspoons light soy sauce
• 2 teaspoons cornstarch and 1 teaspoon sesame oil
Step-by-Step Instructions
1. Slice the mushrooms thinly and cut the spring onions into pieces about 6 cm long.
2. Beat all 6 eggs well, then add the mushrooms, bean sprouts, spring onions, and pepper, and mix again. After that, add the shrimp as well.
3. In a bowl, mix together the chicken stock, light soy sauce, cornstarch, and sesame oil until well combined.
4. Heat a wok and add 3 tablespoons of oil to heat up. Once the oil is hot, pour about one-third of the egg mixture into the wok and fry. After about 5 minutes, flip the omelette over and fry for another 3 minutes.
Continue frying the remaining egg mixture in the same way.
5. Pour the previously mixed chicken stock sauce over the finished omelette. (If you don't like a slightly thick, saucy taste, you can skip this step.)
Once all these steps are complete, you'll have a flavorful and aromatic Chinese-style shrimp omelette dish ready to enjoy.
