Ingredients
- About 8 shrimp (peeled)
- 1 bunch of spring onion (washed and thinly sliced)

- About 8 small cherry tomatoes (cut in half)
- A handful of coriander
- 1 lime (juiced)
- 1 tablespoon olive oil
- 1 tablespoon honey
- A pinch of salt and black pepper powder
Step-by-Step Instructions
1. Cook the rice until done.
2. Heat a pan and add oil. Once the oil is hot, add the shrimp and spring onion and stir-fry. Add salt and black pepper powder and fry for about 3 minutes. Once the spring onion and shrimp have softened, remove them into a plate.
3. In a bowl, combine lime juice, honey, salt, black pepper powder, and olive oil, and mix well.
4. Put the shrimp, spring onion, rice, and cherry tomatoes into a large bowl and mix well. Then pour in the previously mixed lime juice dressing and mix thoroughly. After tasting and adjusting the seasoning to your liking, sprinkle in the coriander.
