Ingredients

  • 2 dried chili pods and 1 tablespoon of chili paste
  • 1/2 teaspoon of Sichuan peppercorns
  • 3 tablespoons of cooking oil
  • 3 cloves of garlic (thinly sliced)
  • 1 inch piece of ginger (thinly sliced)

  • 150 grams of beef (thinly sliced)
  • A little salt
  • 2 tablespoons of corn starch and 1 tablespoon of water
  • 1 tablespoon of cooking wine
  • 1 and a half tablespoons of water

  • A little bean sprouts
  • 2 stalks of spring onion (thinly sliced)
  • 2 star anise flowers
  • Coriander (or) a little spring onion (for garnishing after cooking)

Step-by-step instructions

1. After thinly slicing the beef, put it into a mixing bowl and mix evenly with salt and cooking wine, then let it rest for about 10 minutes. When the time is up, add the corn starch and a little water, and knead evenly again.

2. Put water in a pot and bring it to a boil. Soak the bean sprouts in the resulting hot water for about one minute. Then put them into a bowl and set aside.

3. Heat a wok and add 1 tablespoon of oil. When the oil is hot, add about half of the chilies, half of the Sichuan peppercorns, and the star anise, then fry on low heat until fragrant. Then add the ginger, garlic, and spring onion, and fry for about 30 seconds.

4. Then add the chili paste and stir until the chili oil comes out.

5. After adding 1 liter of water, cover the wok and let it simmer for about 15 to 20 minutes. By the time it's done, you'll get a nice fragrant smell. Remove all the solids such as ginger, garlic, and Sichuan peppercorns, leaving only the broth in the pot. Then add the beef slices and bring the soup to a boil.

6. Once the beef soup becomes tender, pour the beef into the bowl containing the bean sprouts. Sprinkle the remaining half of the chilies into the beef soup. And there you have it - a spicy beef soup that's hot and delicious to eat.

Just before eating, add coriander (or) spring onion and enjoy it deliciously.
