Hello everyone! This time, I'd like to share the recipe for a spicy pork salad tossed with homemade natural chili vinaigrette.
Ingredients
- Pork 500 grams (You can use any part of the pork. The author will be preparing this using pork belly.)
- About 4 slices of ginger
- 1 stalk of spring onion
- 1/2 teaspoon of Sichuan peppercorns
- 1/2 cucumber (thinly sliced into strips)
- 8 cloves of garlic (finely minced), the white part of 1 stalk of spring onion (finely minced), and 1 tablespoon of finely minced ginger
- A pinch of salt and 4 tablespoons of hot water
- 4 tablespoons of chili oil
- 1 tablespoon of light soy sauce and 1 teaspoon of vinegar
- 1/4 teaspoon of sugar
Step-by-step instructions
1. First, place the pork belly into a pot. Then add cold water, 4 slices of ginger, spring onion, and Sichuan peppercorns, and boil over medium heat for 30 to 40 minutes until it comes to a rolling boil.
2. While the pork is boiling, prepare the garlic sauce by placing the finely minced garlic, finely minced spring onion, finely minced ginger, a pinch of salt, and 4 tablespoons of hot water into a small bowl, and let it steep for 5 to 10 minutes.
3. To make the chili vinaigrette, mix the chili oil, light soy sauce, vinegar, and sugar together thoroughly in another bowl.
4. Once the pork has finished boiling for the set time, place it into a bowl of water and let it cool. Once cooled, slice the pork thinly.
5. Place the cucumbers on a plate. Place the thinly sliced pork on top of the cucumbers. Then pour the garlic sauce evenly over the surface. After about 30 seconds, pour the chili vinaigrette over it.
Once everything is mixed thoroughly, you'll have a delicious, spicy pork salad. It can be enjoyed deliciously together with rice.
