  • Salt and sugar to taste
  • 1 stalk spring onion (thinly sliced)

Step-by-step instructions

1. Heat a wok and add 1 tablespoon of vegetable oil. Once the oil is hot, add the sliced pork and fry for about 6 minutes. Then remove the pork and place it onto a plate.

2. Return the wok to high heat, and using the remaining oil, fry the peppers. After frying for about one to two minutes, place the peppers next to the fried pork.

3. Lower the heat to medium, add the ginger, and sauté until fragrant. Then add the dried chilies, garlic, and Szechuan peppercorn powder, and sauté for about one minute.

4. Next, turn the heat back up, return the pork and peppers to the wok, and stir-fry evenly until well mixed.

5. Add the chili oil, salt, and sugar, and stir until well combined. Then add the cooking wine and stir again.

6. Just before taking it off the stove, add the spring onion and stir-fry for about another minute.

Once all these steps are complete, you'll have a delicious Stir-Fried Pork with Peppers dish ready to serve.
