Ingredients
- 2 large potatoes
- 2 tablespoons pure olive oil
- 1 teaspoon dried rosemary and 1 tablespoon chopped spring onion
- About 6 ounces of cheese (cut into small 2-inch square cubes)
- A little salt and ground pepper
Step-by-step instructions
1. Preheat the oven to 425°F.
2. Slice the potatoes into 8 even sections, about 1 inch thick. (When slicing the potatoes, don't cut all the way through — leave the bottom slightly attached so the slices stay connected.)
3. Then wrap the potatoes in foil and bake in the oven for about 35 minutes.
4. Once the time is up, take the potatoes out of the oven and brush them with olive oil.
5. Then, without covering them with foil again, bake for another 15 to 25 minutes.
6. Once the potatoes have softened, take them out of the oven, gently open up the slices a bit more along the cuts you made with the knife, and insert the cheese pieces between the slices.
7. Next, sprinkle the thinly sliced spring onion and rosemary on top. Brush on any remaining olive oil, then sprinkle with salt and ground pepper.
8. Then put it back in the oven and bake until the cheese melts (about 5 to 10 minutes).
Once the cheese has melted, you'll have delicious cheesy baked potatoes ready to enjoy. They can be eaten as a tasty snack or served alongside rice as a flavorful side dish.
