Ingredients

  • Beef slices, 2 lbs
  • Garlic, 8 cloves (thinly sliced), onion, 1 bulb (thinly sliced), and spring onion, 3 stalks (cut into 2-inch lengths)
  • Carrot, 1 (cut into fairly thick strips)
  • Ginger, 1 piece about 1 inch in diameter (thinly sliced)
  • Fish sauce, 6 tablespoons

  • Rice wine, 3 tablespoons
  • Sugar, 3 tablespoons, and honey, 1 tablespoon
  • Apple cider vinegar (or lemon juice), 1 tablespoon
  • Chili peppers, 5 pieces (thinly sliced)
  • Sesame oil, 1 tablespoon, and sesame seeds, 1 teaspoon

Step-by-step instructions

1. Wash the beef thoroughly with water until clean. Rub it with salt and black pepper.

2. Heat a large pot and add 1 tablespoon of cooking oil. Once the oil is hot, add the beef slices and cook for about 2 minutes. Then flip to the other side and cook for another 2 minutes.

3. Next, place the onions into the Slow Cooker. Put the beef slices from earlier on top of the onions. Then add the spring onions and carrots on top of the beef. (Set aside a small amount of the onion to use as garnish once the stew is cooked.)

4. Next, put the fish sauce, rice wine, sugar, honey, apple cider vinegar (or lemon juice), and chili peppers into a bowl and mix well until combined. Once done, pour it over the beef.

5. After that, cover the Slow Cooker with its lid and cook on high heat for about 3 to 4 hours. (If you want to cook on low heat, you'll need to cook for about 5 to 6 hours. When it's halfway through the set time, you'll also need to flip the meat over to the other side.)

6. Once the meat is cooked, take it out of the pot and slice it thinly on a cutting board. Add the remaining small amount of spring onion into the pot. After stirring briefly, transfer the stew sauce into a dish. Then add the sliced beef pieces into that same dish.

And there you have it — a tender and juicy beef stew.
