3. Cover the pot with a lid and cook on low heat for 6 hours, or on high heat for about 4 hours. Cut the spring onions into 2-inch lengths.

Once the set time has passed and the chicken has become tender, taste the broth to check the seasoning. Add more salt and white pepper powder if needed.

4. Next, add the spring onions and cook for about 2 more minutes.

And there you have it - a delicious watercress chicken soup! If you'd like to drink the broth clear without the oil, skim off the oil floating on the surface. Transfer the chicken and vegetables to a large bowl, then strain the broth through a sieve. Afterward, combine it again with the chicken and vegetables.
