Spicy Chicken Curry
Ingredients
- 1 tablespoon vegetable oil
- 1 onion (peeled and thinly sliced)
- 3 pieces boneless, skinless chicken breast (cut into cubes)
- 3 cloves garlic (peeled and finely chopped)
- 1 thumb-sized piece of ginger (peeled and thinly sliced)
- A little salt, ground black pepper, chili powder, and cinnamon powder
- 240 ml chicken stock
- 400 g tomatoes and 2 tablespoons tomato paste (cut tomatoes into medium-sized pieces)
- 2 teaspoons sugar
- 400 ml coconut milk
Step-by-Step Instructions
1. First, preheat the Slow Cooker.
Heat a pan and add oil. Once the oil is hot, add the onions and sauté for about 5 minutes.
2. Next, add the chicken and stir-fry for about 4 minutes.
3. Add the garlic, ginger, salt, ground black pepper, chili powder, and cinnamon powder, and stir until well combined. (You can add other spices or seasonings if you like.)
4. After stirring for about 2 minutes, add the chicken stock, tomatoes, tomato paste, sugar, and coconut milk, and mix well.
5. Once it comes to a boil, transfer the chicken curry into the Slow Cooker and cook on low heat for about 5–6 hours, or on high heat for about 3–4 hours.
Once the set time is up, you'll have a deliciously spicy chicken curry ready.
Now you can enjoy it deliciously with hot steamed rice.
