Ingredients

  • 1 piece of ginger, 5 cm long (peeled and thinly sliced lengthwise)
  • 1 bunch spring onion (cut lengthwise into thin, fairly long strips)
  • 2 liters chicken stock
  • 250 ml clear soy sauce and 110 grams sugar
  • About 4 pieces orange peel (or pomelo peel)

Step-by-step instructions

1. Heat a pot and add a little oil. Add the garlic, star anise, cinnamon, and ginger, and sauté until fragrant.

Then add the spring onion and fry for about 1 minute.

Wrap the fragrant spices you got into a small clean bag, like a tea bag.

2. Put the chicken stock, clear soy sauce, brown sugar, orange peel, and the spice bag prepared earlier into a large pot. Then bring it to a boil.

Once it starts to boil slightly, add the whole chicken into the pot. Check the color of the broth, and add more soy sauce if needed. Then simmer on low heat for about 1 hour.

Once the time is up and the chicken has become tender, take the chicken out of the pot.

3. Then place the whole chicken on a chopping board and let it cool down. Once it has cooled, cut it in half and then slice into bite-sized pieces.

Then place it on a plate and garnish with cucumber and tomatoes.
