For those who often enjoy hot fried rice for breakfast, this time I'd like to share a recipe for bacon and egg fried rice.
Ingredients
- 2 tablespoons of vegetable oil
- 6 oz bacon (cut into small square pieces)
- 1 tablespoon butter
- 2 eggs (beaten)
- 2 stalks spring onion (thinly sliced) and 2 cloves garlic (thinly sliced)
- A small amount of green peas
- 1 carrot (cut into small square pieces)
- 3 bowls of cooked rice
- 1 tablespoon vinegar, 1½ tablespoons soy sauce, and 1 tablespoon brown sugar
- A small amount of peanuts
Step-by-step instructions
1. Heat a wok and add 1 tablespoon of oil. Once the oil is hot, add the bacon and stir-fry until it turns golden brown. Then remove it onto a plate.
2. Add the remaining oil and butter into the wok. Once the butter has melted, add the eggs and stir-fry.
3. Next, add the white part of the spring onion and the garlic, and stir-fry until softened.
4. Then add the green peas, carrot, and rice, and stir-fry until well combined.
Next, add the vinegar and stir-fry for about 2 minutes.
5. As the final step, add the fried bacon, soy sauce, and brown sugar, and stir-fry well for about 2 minutes.
After tasting to check the mild saltiness, you can take it off the stove.
Then sprinkle with peanuts and spring onions.
And there you have it — delicious bacon and egg fried rice ready to enjoy.
