Ingredients
- About 1 viss of chicken
- 2 tablespoons of vegetable oil
- 2 pieces of pork bone
- 1 tablespoon of pounded chili paste pounded until fragrant
- 1 teaspoon of Sichuan peppercorns and 1 dried chili pod
- Plenty of star anise flowers and half a teaspoon of cinnamon
- 1 clove of garlic (thinly sliced)
- 1 small piece of ginger (thinly sliced)
- 3 teaspoons of salt
- Sesame oil
Step-by-step instructions
1. Cut the chicken into fairly large pieces. Wash the chicken pieces and pork bones thoroughly with water until clean.
2. Pour plenty of water into a pot and bring it to a boil. Then add the chicken pieces and pork bones and bring it to a boil again. Boil until all the blood from the pork bones is gone.
3. After that, take out the pork bones and chicken pieces. Wash the pot. Add fresh water, put the pork bones back in, and simmer on low heat for about 40 minutes.
4. After the chicken has cooled down, cut it into bite-sized pieces.
5. Heat a wok and add the vegetable oil. Add the garlic and ginger and sauté for 2 minutes. Then add the pounded chili paste and sauté until the chili aroma comes out. After that, add the cinnamon, star anise flowers, dried chili pod, and Sichuan peppercorns and stir for another minute. Then add the chicken pieces and toss them together.
6. After that, pour the pork bone broth into the wok. Add 3 teaspoons of salt and bring it to a boil for about 20 minutes.
