Ingredients

  • About 10 pieces of beef, cut into medium-sized chunks
  • Half a bowl of coconut milk (about 118 ml)
  • 1 tablespoon of curry powder
  • 2 tablespoons of chili powder
  • Half a teaspoon of thinly sliced ginger

  • 1 to 2 tomatoes
  • Half a teaspoon of thinly sliced garlic
  • 1 small onion (thinly sliced)
  • A little oil
  • A few pieces of carrot, white radish (daikon), and sweet potato

Step-by-step instructions

1. Mix the beef pieces with garlic, ginger, and chili powder, and let it marinate for about 30 minutes.

2. Heat a pot, add oil, then add the beef and stir-fry. Once the beef turns brown, add the sweet potato, onion, and tomatoes, and stir for about 3 minutes.

3. Add a little water and cook until the meat and vegetables soften. Add more water as needed until the beef becomes tender.

4. Once the beef is cooked, add the carrot pieces and stir for about 2 minutes.

5. Add the coconut milk and curry powder, and let it simmer for another 3 minutes. After tasting and adjusting the seasoning to your liking, you'll have a delicious bowl of mixed vegetable beef curry ready.

Right before eating, you can add a boiled quail egg for extra flavor, or simply enjoy the dish as is — it's delicious either way.
