Ingredients
- Pork ribs - 16 oz
- Chili paste - 1 tablespoon
- Light soy sauce - 2 teaspoons
- Cooking wine - 2 teaspoons
- Peanut oil - 2 teaspoons
- Garlic - 5 cloves (thinly sliced)
- Spring onions - 2 stalks (thinly sliced)
- Hot water
Step-by-step instructions
1. Bring water to a rolling boil in a pot, then blanch the pork ribs for about 1 minute. Afterward, rinse the pork ribs in cold water.
2. Heat a wok and add the peanut oil. Once the oil is hot, add half of the garlic and the spring onions, and sauté until fragrant. Then add the chili paste and sauté for about 1 minute.
3. Next, add the pork ribs into the wok and stir-fry for about 3 minutes.
4. Once the pork ribs lose their original color, pour in hot water. (Only add enough water to just cover the pork ribs - no need to add a lot.)
Then cover the wok with a lid and let it simmer for about 15 minutes. After 15 minutes, open the lid and stir until the sauce thickens. Then add 2 teaspoons of light soy sauce and 1 tablespoon of cooking wine, and stir well until evenly combined.
5. Once the sauce has thickened, add the remaining garlic into the wok and stir well until evenly combined.
Then remove from the heat, transfer to a serving plate, and sprinkle a little spring onion on top.
