When there's no curry, we usually just fry eggs for an easy meal. Sometimes, mixing plain rice with oil and salt and eating it with fried eggs makes the rice taste even better. But if you eat it too often, it gets boring. That's why, if you're tired of just frying and eating eggs, I'd recommend trying a spicy fried egg salad instead. It'll give you a different flavor to enjoy, and it's also really easy to make, so I'm sharing the recipe with you.

To make the fried egg salad, first fry 3 eggs as you normally would, beaten and fried.

Once the eggs are fried, take them out onto a plate and cut them into large chunks.

To start mixing the fried eggs, add a small amount of sliced coriander, a small amount of sliced culantro (long coriander), and a small amount of sliced spring onion into a large bowl.

Also add a small amount of sliced cucumber. Then add a small amount of sliced shallots and a small amount of sliced lemongrass as well.

Add 2 tablespoons of rice powder. If you don't have ready-made rice powder, you can put rice in a pot and stir-fry it until it turns brown, then grind it together with mixed chilies to get rice powder.

Add chili powder according to your taste and mix it well. Once mixed, add the fried eggs and mix them in too.

Add 1 and a half tablespoons of lime juice and 2 teaspoons of fish sauce, then mix well. If you want to add oil, just add a small amount.

Once everything is thoroughly mixed, transfer it onto a plate, and your spicy fried egg salad, perfect to pair with rice, is ready.
