  • Dried chili pods, 15 pieces

  • Garlic, 10 cloves
  • Onion, 1 small
  • Cinnamon stick, about 2 inches long
  • Cumin seeds, 2 teaspoons
  • Turmeric powder, half a teaspoon

  • Sugar, 3 tablespoons
  • Chili powder, 2 teaspoons
  • Vinegar, 8 tablespoons

Step-by-step instructions

1. Soak the dried chili pods in hot water for about 5 to 10 minutes. Then cut the chilies in half and remove the seeds inside. Keep the water used for soaking the chilies to reuse later.

2. Put the deseeded chilies into a grinder. Add the garlic, onion, cinnamon, cumin seeds, turmeric powder, sugar, chili powder, and vinegar together, and grind until it becomes a smooth paste.

3. Heat a pot and add 4 tablespoons of oil. Once the oil is hot, add the ground chili paste from earlier and fry it for about 10 minutes. After 10 minutes, scoop it out into a bowl and set aside.

4. Next, add the pork into the pot and stir for about 3 minutes. Then add the fried chili paste from earlier and stir-fry for a few minutes. Pour in the water that was used to soak the chilies. Cover the pot and simmer over medium heat for about 1 hour. (You can add more water if needed.)

About 20 minutes before the pork is fully cooked, add the potatoes. Once the time is up and both the potatoes and pork have become tender, you'll have a delicious spicy potato and pork curry ready to enjoy.
