Hello everyone! This time, I'd like to share a recipe for a hot, spicy, and flavorful pork rib soup.
Ingredients
- 2 pounds pork ribs
- 5 slices ginger, half a shallot, and 5 cloves garlic
- 3 stalks scallion (for 1 stalk, cut only the white part; for the remaining 2 stalks, slice thinly in whole)
- 6 oz watercress/mustard greens
- 3 potatoes (boiled, peeled, and cut into medium-sized pieces)
- 1 tablespoon chili powder and 1 tablespoon chili paste
- 2 teaspoons soybean paste and 1 tablespoon fish sauce
- 1 tablespoon finely minced garlic
- A little salt and ground pepper
Step-by-step instructions
1. Cut the pork ribs into medium-sized pieces, then soak them in ice water for about an hour. (You'll need to change the ice water once after 30 minutes.)
2. Once the time is up, put the pork ribs into a pot, fill with enough water, and bring to a boil.
3. Once boiling, rinse the pork ribs again with water. After cleaning the pot, add back about 8 cups of water. Add the pork ribs, shallot, garlic, ginger, and scallion (white part), then boil uncovered for about 10 minutes.
Once the time is up, reduce the heat, cover the pot, and simmer for about 50 minutes to an hour.
4. In a bowl, combine the chili paste, chili powder, soybean paste, fish sauce, finely minced garlic, salt, and ground pepper, and mix well.
5. While the pork ribs are boiling, blanch the watercress in hot water for about 4 minutes. Then remove the greens and squeeze out the liquid. Mix them well with the chili paste prepared earlier.
6. Once the pork ribs become tender, remove the shallot, garlic, ginger, and scallion. Then add the watercress and potatoes into the pot and boil for about 10 more minutes.
After tasting and adjusting the saltiness to your liking, your hot, spicy, and flavorful pork rib soup is ready. Enjoy it deliciously with rice.
