Hello everyone! For those who love fragrant aromas and a nice spicy taste, I'd like to share a recipe for making shrimp curry.
Ingredients
- Shrimp 600 grams
- Vegetable oil, a small amount
- Coconut milk, 10 tablespoons
- Water, a small amount
- Dried shrimp, a small amount
Source: Manettas.com.au
- Shallots 5
- Garlic 2 cloves
- Long red chili peppers, 6
- Lemongrass, 2 stalks
- Fish sauce, 1 teaspoon
- Sugar, 1 teaspoon
- Salt, half a teaspoon
Step-by-step instructions
First, wash and clean the shrimp thoroughly (you can peel the shells if you like, or you can cook them with the shells on as they are). Pound the dried shrimp as well. Thinly slice the chili peppers, shallots, garlic, and lemongrass, then grind them in a blender until they become a paste.
Next, fry the shrimp in hot oil for about one minute, then set them aside on a plate. In the same pot, add 2 teaspoons of oil and fry the dried shrimp. Once done, transfer it to a separate plate and set it aside.
Next, fry the paste you ground earlier with 2 tablespoons of oil for a few minutes. Then add the coconut milk and water, and let the curry base thicken.
After a few minutes, add the fried shrimp back in and stir. Be especially careful not to overcook it.
After frying for about two minutes, transfer it to a plate and sprinkle the fried dried shrimp powder on top — and you'll have a delicious bowl of curry ready.
