Hello everyone! When eating rice, you may want a spicy soup to go along with it, but instead of making a separate soup, I'd like to share a recipe for spicy potato and beef stew that you can make together with the main dish in one go.
Ingredients
- 2 stalks spring onion (thinly sliced)
- 1/2 onion (thinly sliced)
- 1 potato (thinly sliced)
- 200 grams beef (thinly sliced)
- A small amount of mushrooms (cut off the stems, then thinly slice the caps)
- 2 chili peppers (thinly sliced)
Seasonings for the soup
- 2 tablespoons cooking oil and 2 tablespoons sesame oil
- 4 tablespoons Korean chili flakes and 1 tablespoon chili powder
- 2 1/2 cups water (625 ml)
- 2 tablespoons thinly sliced garlic
- 2 tablespoons soy sauce and 1 tablespoon fish sauce
- A small amount of spring onion
- A small amount of fine chili powder
Step-by-step Instructions
1. In a large pot, add 2 tablespoons of cooking oil and 2 tablespoons of sesame oil, then heat on low. Once the oil is hot, add 4 tablespoons of Korean chili flakes and stir to release the oil's color and flavor.
2. After about 1 minute, once the oil has turned red, add 1 tablespoon of chili powder and mix well until combined. Then immediately pour in 2 1/2 cups of water. Increase the heat and bring to a boil.
3. Once it's boiling, add the beef and potatoes. Add 2 tablespoons of thinly sliced garlic, 2 tablespoons of soy sauce, and 1 tablespoon of fish sauce.
4. Boil for about 5 minutes. Once the potatoes have softened, add the onion, mushrooms, and chili peppers. Simmer for about 7 to 10 minutes.
5. Just before taking it off the stove, add the spring onion and fine chili powder. Then turn off the heat and let it sit on the stove for about 10 more minutes.
6. After 10 minutes, taste for seasoning. You can add a little more salt if needed, or if the soup is too salty, you can add a little more water.
And there you have it — a delicious, spicy potato and beef stew!
