Hello everyone! This time, I'd like to share a recipe that's a favorite among older folks — pork-stuffed bitter gourd.
Ingredients
• 1 bitter gourd
• 1 tablespoon each of oyster sauce and clear fish sauce
• A little salt and ground pepper
• 1 tablespoon cornstarch
• 1/2 tablespoon water
• 300 grams minced pork
• 1 shallot (thinly sliced)
• 1/2 tablespoon oil
Step-by-step method
1. Wash the bitter gourd thoroughly and slice it into rings about 1 centimeter thick. Use a spoon to remove the seeds and white flesh from each ring.
2. If you want to reduce the bitterness of the bitter gourd, sprinkle salt onto the rings and let them sit for about 30 minutes. Once the time is up, rinse them with water 2 to 3 times. (If you prefer the bitter taste, you can skip this step.)
3. Mix the minced pork thoroughly with the shallot, oyster sauce, clear fish sauce, salt and ground pepper, cornstarch, 1/2 tablespoon water, and 1/2 tablespoon oil until well combined.
4. Next, stuff the pork mixture into the center of each bitter gourd ring.
5. Arrange the pork-stuffed bitter gourd rings neatly in a heat-resistant dish, then drizzle 1 tablespoon of oil over the bitter gourd.
6. Place the dish of bitter gourd into a steamer and steam over medium heat for about 15 to 20 minutes.
7. Once the time is up, remove it from the steamer, garnish with coriander leaves, and enjoy deliciously with rice.
