Ingredients
- Oil for frying and cold water for soaking the chicken feet
- 2 cloves garlic (thinly sliced)
- 2 stalks spring onion (thinly sliced)
- 2 chili peppers (thinly sliced)
- A one-inch piece of ginger (thinly sliced)
- About 20 pieces of chicken feet (trim off the nails and any other unclean parts)
- 1 tablespoon soy sauce
- Half a tablespoon oyster sauce
- 2 star anise flowers
- 250 ml warm water
Step-by-step instructions
1. Wash the chicken feet thoroughly until clean, then cut each chicken foot in half.
1. Pour enough water into a pot and bring it to a boil. Then add half a teaspoon of salt, one teaspoon of sugar, and half a teaspoon of rice vinegar into the boiling water. Once the water is boiling vigorously, add the chicken feet and boil for about 2 minutes. After 2 minutes, scoop them out into a bowl.
2. Mix the chicken feet with one tablespoon of light soy sauce, then knead evenly and let them marinate for about 30 minutes.
3. Heat a wok and add oil. Once the oil is hot, add the chicken feet and fry until they turn golden brown.
4. Soak the fried chicken feet in ice water filled with plenty of ice cubes for about 3 to 4 hours.
In a bowl, mix together the garlic, spring onion, chili, ginger, soy sauce, oyster sauce, and star anise evenly.
5. Once the soaking time is up, transfer the chicken feet into a steaming pot and steam for about 15 minutes. After 15 minutes, pour the previously mixed oyster sauce mixture over the chicken feet and steam for another 30 minutes.
Once the time is up, you'll have a delicious braised chicken feet dish ready. You can enjoy it deliciously with your favorite dipping sauce or condiment.
