Eggplant has a natural sweetness and tastes extremely delicious whether fried or boiled. We've cooked eggplant before, but this time I'd like to introduce a new cooking method that doesn't take as much time as before.

Ingredients
- Medium-sized eggplants – 2
- Spring onion (pre-sliced) – 1 stalk
- Garlic (finely minced) – 1 teaspoon
- Soy sauce – 1 and a half tablespoons
- Sesame oil – 2 teaspoons
- Sugar – 1/4 teaspoon
- Scallion/green onion powder – 1/2 teaspoon
- Sesame seeds (toasted) – 1 teaspoon
- Chili flakes
Preparation and Cooking Method
1. Cut the eggplants lengthwise into thin strips, then cut them in half again from the middle.
2. Put water in a pot, bring it to a boil over high heat, and cover with a lid. Once it's boiling, add the eggplants and steam for about 3 minutes until they soften (but be careful not to let them get too soft).
3. Once softened, transfer them into a bowl and let them cool. Mix all the remaining ingredients together with the eggplant and gently knead/combine thoroughly.
Taste test it, and if needed, add a bit more soy sauce. Once done, you can enjoy it with great flavor.
