Ingredients
- 4 oz pork (thinly sliced)
- 1.5 tsp cooking wine and 1 tbsp water
- 1.5 tsp light soy sauce and 1/2 tsp dark soy sauce
- 1 tbsp finely sliced ginger
- A little sugar and 1/2 tsp cornstarch
- 3 eggs and a little water
- Chicken stock or vegetable stock
- A little salt and 1 tsp sesame oil
- 1 tbsp oil for frying the pork and 1 stalk spring onion
Step-by-step instructions
1. Put the thinly sliced pork into a large bowl, then mix thoroughly with the cooking wine, light soy sauce and dark soy sauce, 1 tbsp water, ginger, sugar and cornstarch until well combined. Then marinate for about 15 to 20 minutes.
2. Crack the 3 eggs into a measuring cup and measure the volume of the eggs in milliliters. Pour the eggs into a bowl, add a little salt, and whisk for about 1 minute.
3. Measure out an equal amount of chicken stock or vegetable stock to match the measured egg volume, and add it to the egg bowl. Also add an equal amount of water to match the egg volume. Add 1 tsp sesame oil and whisk thoroughly until well combined.
4. Next, prepare the steamer, and place a heat-resistant bowl inside the steamer. Then strain the egg mixture through a sieve and pour it into the bowl.
5. Cover the steamer lid and steam for about 3 minutes. Once 3 minutes are up, turn off the heat and let it sit for another 14 minutes.
6. While waiting, fry the pork. Heat a wok and add 1 tbsp oil. Once the oil is hot, add the pork and fry until it turns golden brown.
7. Just before taking it off the heat, add the spring onion and stir-fry together. Remove the steamed egg bowl from the steamer as well. Then pour the fried shredded pork on top of the steamed eggs.
And there you have it — a delicious shredded pork with steamed eggs is ready to serve.
