• One whole catfish (or any fish you prefer)
• One knob of ginger (sliced thinly into strips)
• 2 tablespoons of heated vegetable oil
Ingredients needed for the sour sauce

• 3 tablespoons of fermented chili sauce
• 2 tablespoons of cooking wine
• Half a tablespoon of oyster sauce and half a tablespoon of fermented soy bean paste
• 3 cloves of garlic and 2 stalks of spring onion (sliced thinly)
• 2 tablespoons of vegetable oil
Step-by-step method
1. Wash the fish and cut it in half right through the middle of its belly. Place the thinly sliced ginger both inside the belly of the fish and on top of it.
2. In a small pot, add 2 tablespoons of oil, then add the garlic and spring onion and fry. Add the chili sauce and soy bean paste, and stir until fragrant. Then add 2 tablespoons of cooking wine and 1 tablespoon of oyster sauce, and stir until well combined.
3. Pour the resulting sour sauce all over the whole fish. Then steam the fish over medium heat for about 8 to 10 minutes.
4. Once the time is up, add the spring onion on top of the steamed fish. Pour 2 tablespoons of hot oil over the steamed fish. Pouring the hot oil this way makes the steamed fish even more fragrant.
