For those who love kauk nyin htoke, a traditional Myanmar food, this time I want to share how to make pork sticky rice bundles.
Ingredients
- About 75 dried bamboo leaves (use 3 leaves for each sticky rice bundle)
- 5 viss of sticky rice
- 3 viss of pork
- 4 tablespoons of clear soy sauce and 3 tablespoons of dark soy sauce
- 4 teaspoons of salt and 5 tablespoons of sugar
- 3 tablespoons of cooking wine
- 1 teaspoon of ground white pepper
- 4 tablespoons of water
Ingredients needed for mixing the sticky rice
- 5 tablespoons of clear soy sauce
- 5 tablespoons of dark soy sauce
- 1½ tablespoons of sugar
- 2½ tablespoons of salt
Step-by-step preparation method
1. Soak the dried bamboo leaves in water for about one night.
Also soak the sticky rice for about one night.
Cut the pork into medium-sized pieces, then mix it well with clear soy sauce, dark soy sauce, salt, sugar, cooking wine, and ground white pepper, and let it marinate for about one night.
2. The next morning, take out the sticky rice and let it drain dry. Once the rice is dry, mix it well with clear soy sauce, dark soy sauce, sugar, and salt, then let it sit for about 30 minutes.
Wash the bamboo leaves with fresh water, then wipe them dry with a clean cloth.
3. Once the time is up, shape three bamboo leaves into a cone shape and add the sticky rice. Then add the pork. Add a little more sticky rice on top of the pork. After that, tie the sticky rice bundle with straw string (or) any type of string.
You can study the detailed steps of how to fold the bamboo leaves and tie the sticky rice bundles in the pictures below.
4. Once all the sticky rice bundles have been tied, put them all into a large pot for boiling. Add water until all the sticky rice bundles are fully submerged.
5. Place the pot on the stove and cook over low heat for about 4 hours. Once the water starts boiling vigorously, turn off the heat and take out the sticky rice bundles.
And now you have delicious pork sticky rice bundles!
