Ingredients
- 8 oz pork belly (cut into 3-inch lengths)
- 1 clove garlic (finely sliced)
- 1/2 teaspoon thinly sliced ginger
- 2 tablespoons soy sauce
- 1/4 teaspoon ground black pepper
- 3 tablespoons vegetable oil
- 1 stalk spring onion (cut into 1-inch lengths)
- 7 dried chili pods
Vegetables needed
- 2 mushrooms
- 4 oz spring onion (cut into 2-inch lengths)
- 3 chili pods (halved)
- 2 cloves garlic (thinly sliced)
- 2 cloves shallot (thinly sliced)
- A pinch of salt
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 tablespoons cornstarch and 1 tablespoon water
Step-by-step instructions
1. In a large bowl, mix the pork, garlic, ginger, soy sauce, and ground black pepper together thoroughly.
2. Rub the mushrooms with a little salt and let sit for about 5 minutes. Then squeeze out the liquid from the mushrooms.
3. Mix 1 tablespoon of cornstarch with 1 tablespoon of water.
4. Heat a wok and add the vegetable oil. Add the spring onion and cook until it starts to sizzle, about 2 minutes.
5. Then turn off the heat, add the chili pods, and let them sit in the oil for about 1 minute. Remove the spring onion and chilis, then pour the oil into a separate bowl and set it aside.
6. Coat the pork thoroughly with the remaining 1 tablespoon of cornstarch. Then heat the wok and add the oil set aside earlier. Add the pork and stir-fry for about 2 minutes.
7. Once the pork turns brown, add the mushrooms, shallot, garlic, spring onion, and chili pods, and stir-fry for about 2 minutes. Then add the oyster sauce.
8. Next, pour in the cornstarch mixture and stir thoroughly. Taste and adjust the seasoning as needed, and you'll have a delicious crispy stir-fried pork dish ready to serve.
