Ingredients

  • 2 teaspoons fish sauce
  • 2 teaspoons rice wine
  • 1/8 teaspoon ground white pepper
  • 1 teaspoon sesame oil and 2 tablespoons olive oil
  • 2 teaspoons corn starch
  • 2 teaspoons thinly sliced ginger
  • 2 tablespoons thinly sliced garlic
  • 1 bunch celery (trim off the mature part, then cut into 1.5-inch long pieces)
  • 1 lb beef (sliced thinly and lengthwise)

Sauce needed for stir-frying

  • 2 tablespoons oyster sauce
  • 1 teaspoon fish sauce
  • 1/2 teaspoon sugar
  • 2 teaspoons corn starch
  • 2 tablespoons water

Step-by-step instructions

1. To make the sauce, mix the oyster sauce, fish sauce, sugar, corn starch, and water together thoroughly in a bowl.

In another bowl, mix together the fish sauce, rice wine, ground white pepper, sesame oil, and corn starch thoroughly. Then add the beef and knead well, marinating for about 15 minutes.

3. Heat a wok/pan and add 2 tablespoons of olive oil. Add the beef pieces and stir-fry until golden brown. Once both sides of the beef are cooked, transfer it to a plate.

4. Using the remaining oil in the pan, sauté the ginger and garlic. Then add the celery and stir-fry for about 2 to 3 minutes. After that, add the sauce and beef, and stir-fry for about 2 more minutes.

After tasting to check that the seasoning is mild and well-balanced, you can take it off the stove.

For those who like sesame, sprinkle a little sesame seeds on top. Now you'll have a delicious bowl of stir-fried beef with celery.
