When eating, it's important to have a balanced diet. Just as the nutrients we get from meat are necessary, we shouldn't forget to eat vegetables too. So this time, I'd like to share a recipe for spicy eggplant that can be enjoyed as a side dish.
Ingredients
- 2 eggplants
- 1 tablespoon soy sauce
- 1 tablespoon chili sauce
- A little oil
- 1/2 tablespoon finely chopped ginger
- 2 cloves garlic (thinly sliced and finely chopped)
- 2 stalks spring onion (cut into medium pieces)
Step-by-step instructions
Cut the eggplants into medium-sized pieces and soak them in water for about 15 minutes. Then fill a large pot with water, add a little oil and a little salt, and bring it to a boil. Once it's boiling, add the eggplants and let them cook for about 1-2 minutes. Doing this reduces the amount of oil the eggplant absorbs and prevents it from becoming mushy.
Next, heat a wok, add a little oil, then add the ginger and garlic and stir-fry. At the same time, add a little chili paste and stir-fry again.
Then add the eggplant and soy sauce and stir-fry for about 5 minutes. Just before taking it off the stove, add the spring onions and turn off the heat.
And there you have it — a delicious bowl of spicy eggplant.
