Hello everyone! This time, I'd like to share a recipe for spicy stir-fried sweet potato leaves that will please both vegetarians and spice lovers alike.
Ingredients
- Sweet potato leaves 300 grams
- Vegetable oil 2 tablespoons
- Ginger 10 grams (thinly sliced)
- Water 2 tablespoons
- Chili peppers 4 pieces
Ingredients needed for the sauce
- Fermented bean curd (or tofu) 1 tablespoon
- Sugar 1/4 teaspoon
- Chili powder 1/4 teaspoon
- Sesame oil 1/2 teaspoon
- Oyster sauce 1 tablespoon
Step-by-step preparation method
1. First, wash the sweet potato leaves thoroughly in salted water.
2. Next, cut the sweet potato leaves into bite-sized pieces.
3. Peel the ginger, wash it, and slice it thinly.
4. Cut the chili peppers into medium-thin slices.
5. Next, prepare the sauce. In a bowl, mix the fermented bean curd (or tofu), chili powder, sesame oil, and oyster sauce together well.
6. Heat the pot, add oil, add the ginger, and stir-fry for about 10 seconds.
7. Next, add the chili peppers and the sauce mixed earlier, and stir for about 1 minute.
8. Add the sweet potato leaves and stir-fry for about 30 seconds. Add a little water and stir-fry for another 30 seconds.
9. After turning off the heat, stir for a few more seconds.
Then, transfer it to a plate and enjoy it deliciously with hot rice.
